Ingredients:
230g ground almonds;
40g unsalted butter, softened;
3 tsp. baking powder;
1 egg white;
500g fresh blackberries;
To your taste: stevia or other calorie and carb free sweetener of your choice.
How to Make a Low Carb Blackberry Pie:
- Preheat the oven to 180C/350F/gas mark 4.
- Make a dough by mixing the ground almonds, baking powder, butter, egg white and sweetener together. You can mix it either manually or in a food processor if you like.
- Cut two sheets of non-stick baking paper into the shape of your baking dish (round, square, rectangular), and make sure the paper is big enough to cover the walls and bottom of the baking dish.
- Put the dough in between two sheets of the non-stick baking paper and roll out the dough to fit your baking dish.
- Carefully lift the dough together with the baking paper and place it
into your baking dish, then press the dough into the dish with the baking paper still in place. Remove the top layer of the paper afterwards.
- Cut
the blackberries in half lengthwise, place the pieces on top of the pastry and
sprinkle them with stevia or your favorite sweetener - 1 tsp. of pure
stevia should be enough, but remember that the strength of stevia is
different in various brands, so always taste it and add a bit more, as
the sweetness will be weaken in the baking process.
- Bake for 25-30 min until the pastry is golden. The blackberry pie can be served hot, warm or cold.
