Oven Roasted Chicken Recipe with Herbs, Garlic and Lemon
This simple oven roasted chicken recipe will be a favorite with all the family. This herb, lemon and garlic roasted chicken always turns out moist and full of flavor. We are going to roast a whole chicken stuffed with lemon and garlic and doused with a lemon, garlic and herb blend.

Ingredients:
1 x 1.3 kg (2.9 Lbs.) organic chicken, giblets removed;
2 tbsp. of fresh parsley, chopped;
1 tbsp. of dried marjoram;
5 garlic cloves pushed through the garlic press;
9 garlic cloves unpeeled squashed;
2 lemons;
1 tbsp of olive oil;
1 tsp. sea salt;
½ tsp freshly ground pepper.
How to Roast a Chicken:
- Preheat the oven to 180C/350F/gas mark 4.
- Rinse the chicken, then pat dry with a paper towel and place breast side up in the roasting pan.
- Use a food processor or pestle and mortar to blend the parsley, marjoram, garlic, juice from one lemon, olive oil and seasoning together.
- Cut the remaining lemon into 4 pieces.
- Salt and pepper the cavity of the chicken, insert the lemon and squash the garlic into the cavity and truss the bird.
- Rub the herb, garlic and lemon mixture onto the chicken skin.
- Cover the roasting dish with foil.
- Place the roasted pan with the chicken into a preheated oven and cook for 40 min before removing the foil.
The cooking time depends on the weight of the poultry and is normaly specified on the
packaging.
- When it is ready, remove from the oven, and let it stand for 10 min before carving it.
- Serve with steamed broccoli or other seasonal vegetables.
