The Carambola or Starfruit (given its shape), is now becoming more widely available, although native to South East Asia. Carambolas are yellow when ripe and the entire fruit, including the skin, is edible.
As with most fruits, they are high in vitamin C and antioxidants. It also contains vitamins B and A. They are a good source of dietary fiber. Other Carambola benefits include the reduction of both blood pressure and cholesterol.
